Dexter cattle, originally known as the "poor man's cow", are some of the smallest cattle in the world, standing at 40 inches tall and weighing between 700-900 pounds. While size is the most distinguishing characteristic, Dexters are useful, productive, and multi-purpose animals. Livestock do not need to be "large" to offer big benefits, and especially for small acreages there is none that can out-perform a dexter. Dexter cattle originated in southern Ireland during the early 1800s and developed from Kerry cattle - an Irish dairy breed. Dexter beef is the right choice when choosing high-quality, environmentally-friendly meat. But why? Dexter beef is naturally more tender than other beef and contains more Omega-3 and Omega-6 fatty acids, iron, and protein - essential nutrients for our bodies. Due to the size of the breed, their meat is leaner than other breeds, making it a healthier option. DNA testing labs have identified genetics for tenderness, marbling, and ribeye size. Their meat is known to be lean yet flavorful, a characteristic that is highly sought after in the beef industry. Another notable advantage is the conversion ratio from hanging weight to cut & wrap weight. Typical beef breeds tend to fall within the 40-50% range, Dexter harvested at the optimum time will be in the 50-55%+ range. Now, this may sound like a really good sales pitch, but when you look at the underlying genetics of Dexters, the DNA evidence tells us why Dexter beef is superior. Ask any butcher or chef that has had the opportunity to taste Dexter beef and they will validate that it is notably better than typical beef breeds. Dexters are consistently ranked among the top in blind taste tests. In fact, it is alleged that Chef Ramsey himself only serves two types of beef at his restaurants worldwide, and dexter is one of them. Our herd is pasture-raised, grass-fed, gain-finished, and free of antibiotics for a minimum of 6 months prior to processing. That's right: nothing but the beef.
